हींग
हींग अति गुणकारी है । इसका प्रयोग औषधि के रूप में भी किया जाता है तथा दैनिक खान-पान में भी यह प्रयोग में लायी जाती है ।
हींग की पैदावार भारत में नहीं होती । यह अधिकतर अफगान, तजाकिस्तान उजबेकिस्तान तथा इनके साथ जुड़े कुछ क्षेरों में ही होती है । प्राचीन काल से ही भारतवासी अपने गर्म-मसालों के लिए वहीँ से हींग तथा अन्य वस्तुओं को मंगवाते रहे हैं, जो सिलिसिला आज भी जारी है ।
हींग का पौधा बड़ा नहीं होता । हीन के पौधे से एक पारकर का दूध-सा निकलता है जिसे कुछ देर के लिए रखने से वह गोंद की भांति जम जाता है । हींग के पत्ते तोड़कर बकरी की खाल में रख कर सुखाए जाते हैं, जो बाद में हींग का रूप धारण करते हैं । यही सूखे पत्ते हींग हैं । असल हींग की गंद दूर से ही आने लगती है । आजकल नकली हींग का धंधा भी बड़े जोरों पर है ।
हींग भी कई प्रकार की होती है । सबसे उतम क्वालिटी की हींग को हीरा हींग कहते हैं । वही औषधियों में उपयोग की जाती है ।
गुण तथा लाभ
पाचन शक्ति बढाकर पेट के सब रोगों के जड़ से नाश करने वाली हींग ही है ।
खांसी दम क्षय रोगों में हींग का सेवन करना बहुत अच्छा होता है । नेत्र तथा हृदय रोगियों को हींग के सेवन से लाभ पहुंचता है । उदर रोग अजीर्ण कब्ज जैसे रोगों में हींग का सेवन लाभकारी माना गया है ।
Asafoetida
